Kanji readings change with the word and context. 今日 is normally きょう, not the individual on-readings of 今 and 日. Sentence analysis helps resolve those differences.
What changes and what stays
Known kanji words and katakana become hiragana. Numbers, Latin text, punctuation and line breaks remain. Half-width characters are normalized. Unknown kanji stay visible so you can supply their reading.
Written kana and spoken sounds
The hiragana output retains the written particles は, へ and を. They are pronounced wa, e and o in those grammatical roles. Use the romaji converter when you want those particle sounds represented in Latin letters.
